Who Ya Calling Thunder Thighs?



I rarely make the same thing twice. Inspector Gadget loves that, but the kids not so much. They would eat skirt steak and macaroni and cheese daily. LuLu's Red Curry Thunder Thighs is a favorite of mine. I've made it several times and it always stinks up my kitchen of curry for a couple of days. Totally worth it though. The sauce it makes is so tangy and goes great over steamed rice. Plus, it has lots of veggies in the dish, so a bunch side dishes aren't really necessary. I usually serve a green salad as the side and call it a day. Bet this recipe would be good in the crock pot too. Just brown the chicken and then throw everything else in.

LuLu's Red Curry Thunder Thighs
Yield: 4 servings.
8 skinless, boneless chicken thighs (I use bone-in sometimes)
Coarse salt and cracked black pepper
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 celery rib, finely chopped
1 small red pepper, chopped
1 jalapeno pepper, seeded and minced
3 garlic cloves, minced
1 teaspoon curry powder
2 tablespoons stone-ground mustard
1 teaspoon dried oregano
2 tablespoons fresh flat-leaf parsley
2 tablespoons fresh cilantro, chopped
1 cup each: white wine and tomato sauce
1 chicken bouillon cube
Fresh lime juice (optional)
Fresh cilantro (optional)
1. Season thighs with salt and pepper. Heat the olive oil in a large skillet over medium-high heat, then sear the thighs on both sides until nicely browned. Remove from pan; set aside.
2. In same skillet, saute onion, celery and peppers until soft. Add garlic. Saute 1 minute. Season vegetables with salt and pepper. Stir in curry powder, mustard and oregano, then parsley and cilantro. Add wine, tomato sauce and bouillon. Return thighs to pan.
3. Bring to boil, then simmer 10 minutes. Cover. Simmer 5 more minutes. Adjust seasonings. Sprinkle with lime juice and cilantro.

Our guild challenge for February was to create a quilt for the Alzheimer's Art Quilt Initiative. We blindly choose color inspiration from a bag of crayons. My colors were cotton candy and apricot. 
I whipped up a wonky log cabin and did some wonkier straight line quilting.

Lizards roam wildly in Florida and they always seem to get in my house. I try to usher them out and explain to them that I will find their dried-up carcass eventually, but they don't listen. This little guy is poised on the top of my tabletop Christmas tree. We thought he was dead, but when I went to shoot a picture, he took off while Hollywood and I did our "snake scream." Now he's back in the exact same position. He may be in a coma. I have no idea why lizards can't find food and water in here. My kitchen floors aren't that clean. My mom always told me it was bad luck to kill lizards or crickets, so I let them die "naturally" in the house. Now snakes in the house, that's an entirely different story.

  4. Oh gosh that has my mouth watering, even at breakfast time. I'm making Pork Vindaloo for dinner tonight but I'm going to have to try this as well. I love Indian food. Great little quilt for the Alzheimer's project.

  5. the curry sounds amazing - what a funny name. i dont like the idea of smelling up the house but sometimes it happens..

    the small quilt has such lovely colors!
